
Pear Carpaccio with Citrus, Olive Oil and Crunch
Ingredients
23 green pears
2 tbsp good quality extra virgin olive oil
2 tbsp toasted flaked almonds
Finely grated orange zest
Micro herbs or snow pea sprouts, optional
Method

Using a sharp knife or mandolin, slice pears very thinly. Arrange slices slightly overlapping on a serving platter.

Drizzle with extra virgin olive oil and scatter with the orange zest.

Sprinkle with the toasted flaked almonds, finish with micro herbs and serve immediately.
